Roasted veg hummus
For hummus purists this probably sounds a little sacrilegious but this really is a great way to reduce waste by using up leftover roasted veggies and it tastes delicious!
1 bowlful of roasted veggies (cold)
1 can of chickpeas
A glug of olive oil
A squeeze of lemon juice
1 tablespoon tahini (or more to taste)
2 garlic cloves peeled
A pinch of cumin
A dash of cold water
A twist of black pepper
Food processor or blender for the best texture.
- Take a bowlful of leftover roasted veggies (I like to group together either Mediterranean or root veg) and blend these together with a drained can of chickpeas.
- Add in a generous glug of olive oil, a squeeze of lemon juice, a large dollop of tahini, 2 garlic cloves and a pinch of cumin. Blend again.
- Taste and add extra of any of the seasonings, to taste. If the texture is still too chunky for your liking, add in some water gradually and blend until you get the consistency you prefer.
Jar up with some carrot batons or dip immediately for a healthy snack.
